This is a simple dish made from a cheap and nutritional fish – Mackerel. Although the fish has a strong flavour, it goes well with spices.
I now grill the fish instead of frying – which we do in the good old days. I am now trying to maintain my goal weight and hence I now modify my cooking method.
I have experimented with the fish prepared this way and use it for a salad as well.
I will update you with a few recipes using grilled mackerel at a later date.
This dish goes well with rice. And ,oh, yes, eat it with your hands.

Serves 4 with other accompanying dishes

Ingredients:
450g , or About 2 Mackerels or 4 fillets
Marinade
A
3 cm Ginger
2 cloves Garlic
1 Shallot
1 tsp Turmeric powder
½ tsp Salt
1 tbp Water
Method:
- Put ingredients A in a blender and blend till fine. Actually, it is easier to pound the ingredients in a pestle and mortar since it is such small quantity
- Mix with the rest of the ingredients and marinade fish for about ½ hour.
- Grill fish skin down for about 4-6 minutes.
- Alternatively, you can shallow fry the fish.
To shallow fry:
- In a frying pan, heat up some oil, about 1 cm., to about 180C. To test: drop a cube of bread into the oil. It should sizzle. Then the oil Is not enough.
- Gently place the fillets skin side down and fry for about 3 minutes or when you see that the skin is crispy. Turn the fish over and fry for another 3 minutes. Dish out and drain on kitchen towel.
- If you are frying the fish whole, add a few more minutes to the frying time.
Serve with sambal and lime/lemon juice with a pinch of sugar.
