Mushroom Mug Omelette

 

This is another version of Mug cakes. I made mug omelette with mixed frozen vegetables before.

As I have some left over open cup mushroom in the fridge, I decided to give this mug cake/ savoury thing another go. It has only 3 ingredients (excluding the seasoning, of course).

This time I made them in a bowl.  You can easily make this in a mug. But I thought for presentation wise, a mug would show the content better. Still, you do not need to have lots of washing up, just one bowl and a fork.

Ingredients:

2 eggs ( or more if you like)

½ open cap mushroom, chopped or 3-4 chestnut mushrooms or other type of button mushroom – chopped

1 stalk spring onion – chopped

Salt and pepper

Method:

  1. Spray a small bowl with oil.
  2. Put the chopped mushroom in the bowl and ping it for about 1 minute (900w), until it is a bit softened.  You will need to check your time according to your microwave wattage.
  3. With a piece of kitchen towel, blot out the excess moisture.
  4. Crack the eggs into the bowl and give it a good mix.
  5. Add in the chopped spring onion and the seasoning and mix well.
  6. Microwave for 1 minute. Stir it to combine for even cooking.
  7. Microwave for another 1 to  2 minutes (depending on the volume) until set or to your liking.
  8. Remove and drizzle with ketchup and enjoy!!

Variation:

You can make all sorts of omelettes using all types of ingredients.

If you like a cheese omelette, prepare the ingredients as above in a mug and add a piece of laughing cow cheese wedge in the centre. Microwave as usual, and voila!!, you have a cheese omelette.

Try different ingredients and get your creativity juice flowing.
