Turkey Cup Cakes
I have wanted to make these for a long time. I had seen a TV show where the chef, or the presenter, makes savoury dishes and presents them as sweets. I loved watching this show. I cannot remember his name but I remember that he went around on a toaster-shaped van doing his shows.
So finally I am giving it a try.
I used lean turkey breast mince in this recipe. You can use whatever meat you fancy, like minced chicken, pork, beef or lamb. You can also use whatever seasoning you wish. I made mine using barbecue sauce as I would make my burgers.

Ingredients:
500g Turkey breast mince
1 medium Onion ( about 150g) – finely chopped
1 Egg
2 tbsp barbecue sauce
¼ tsp Salt
¼ tsp Mixed herbs
½ tsp Black Pepper powder
Mash
800g White potatoes
2 sachet Butter Buds ( or ½ tbsp. butter)
¼`tsp Nutmeg powder
Skim milk or stock for diluting the mash
Salt and white pepper powder to taste.
Cupcake tin
8 Cupcake or muffin cases

Method:
- Turn on the oven to Gas Mk 6, 200C.
- Mix the mince, chopped onion, egg, barbecue sauce, mixed herbs, salt and pepper.
- Check that the taste is to your liking by microwaving a ½ tsp of it and check the taste. Adjust if need be. Then divide into 8 portions.
- Line the cupcake or muffin tin with the cases
- Lightly spray with calorie-controlled spray.
- Fill the cases with the mixture making sure that the top is flat.
- Bake in the oven for around 20 to 25 minutes. Check that the muffins are done by pricking it with a skewer and the juice runs clear. The cooked muffin would also shrink a bit from the side of the tin.
- Remove from the oven and leave to cool on a rack.
- When the cakes are in the oven, peel the potatoes and cut into chunks. Boil them in lightly salted water until cooked – about 20 minutes.
- Drain. Tip the potatoes back to the pot and mash with a potato masher. Add the nutmeg, pepper powder, butter buds or butter.
- Add skim milk or stock until you get a smooth piping consistency. Season if needed.
Put the mash in a piping bag fitted with a star nozzle. Set aside. - When the muffins are cool enough to handle, pipe the mash on top and decorate with mint or basil leaves and strawberries or other decorations that you fancy.
- Serve with fries, vegetables and gravy and surprise your guests or your children!!.
Note:
You can spread a layer of chutney on top of the meat before piping the mash. This will give an extra oomph to the cupcakes.
