This soup is easy to make and very low in calories or points. I use a hand blender as then I don’t have to do so much washing up. Notice that I have not given the measurement for the water. The reason is that I am making it easy so that the soup is not too hot for blending.

Ingredients:
I head Broccoli – chopped, including the stalk (separate)
1 onion About 150g, chopped
2 cloves Garlic – chopped (optional)
1 Stock cube
Hot water
Salt and pepper
Calorie control spray
Herbs: (you can make into a bouquet garni or just leave it as it is.)
2 Bay leaves
A few sprigs Thyme
1 sprig Rosemary
And other herbs of your choice.

Croutons

Method:
- Spray a cooking pot with calorie control spray. Put over medium heat and add in the chopped onion and garlic. Toss until the onion is soft.
- Add in the chopped broccoli stem and stir fry for about 2 minutes. Then add in the rest of the broccoli.
- Add in some hot water, just barely covering the vegetables. Bring to a boil. Simmer for about 5 minutes uncovered. Turn the vegetable around at least once. Then turn off the flame.
- Let the soup cool for about 15 to 20 minutes while you go about with your other chores.
- Before you blend, add some cold water to the pot so that you can blend easily. This way, you will avoid getting scalded by the hot soup.
- After blending, pour the soup into the pot and add in the herbs, the stock cube. Adjust the amount of water you wish to add in.
- Bring to a gentle boil and simmer gently for about 5 minutes making sure that the colour remains green.
- Season with salt and pepper.
To serve:
Remove the herbs and ladle into individual bowls. Garnish with croutons and yogurt or fresh cream if you wish.
Broccoli and Cheese Soup
If you prefer broccoli and cheese soup, just add in 1 triangle of laughing cow cheese to the soup for an extra 1 smart point.
So this easy and ‘safe’ soup is ready within 30 minutes.
