Sweet Potato Pizza

I was away for a holiday recently and I have yet to sort out my photos so that I can share with you. In the meantime, I am posting a simple pizza recipe which I tried some time ago.

This recipe was shared by my friend Rachel, in her Facebook. It looks pretty enough and simple so I gave it a try.

I am not a gluten intolerant  person nor someone who needs freefrom food. It is just that I have tried cauliflower pizza and it was sort of ok. I do not like the slight bitter taste of cauliflower.

The sweet potato pizza is actually quite tasty!! It is definitely less soggy than the cauliflower type. So here is the recipe.

I did not measure or weigh the ingredients up carefully. I  just made it to my liking and it is so simple that you will not have any problems with it. Just use your favourite ingredients.

Ingredients:

2 medium sweet potato – sliced thinly

Around 200g to 300g Cheese of your choice, I used matured cheddar and parmesan

Toppings of your choice – I used chicken, onions, mushroom and sweet peppers.

Herbs – oregano or basil, fresh or dried.

 

Method:

  1. Heat oven to 200C or gas mark 6.
  2. Line a baking sheet ( approximately 20 by 30 cm) with baking parchment or non-stick baking paper
  3. Arrange the sliced potato in a single layer, over lapping the pieces so that there are no holes in between them. Sprinkle about 1/4 of the cheese all over the sweet potato base. This will help to hold the base better.
  4. Bake (blind) for about 15 minutes so that the base is dry.
  5. Remove from the oven and top with the rest of the cheese and the toppings, making sure that the toppings are well distributed.
  6. Turn the oven to 220C or gas Mk 7 and bake for about 15 to 20 minutes or until the cheese has melted and bubbly.
  7. Remove and slice into serving pieces and enjoy!!

Note: the baking paper will make it easy to lift the pizza out for serving or cutting.
