Home Made Cranberry Sauce

Hi,

Just a quick recipe to share.

I know you all are busy getting ready for Christmas. For those who are really celebrating, I mean of the Christian faith, you would be busy with all the preparations and cooking, shopping and present wrapping. Since Christmas is my other half’s responsibility, I am not so panicked, but I still need to do the cleaning. This year I am a bit organised and have cleaned the display cabinets that house a lot of knick knacks. Yesterday, I even managed to clean the oven!! Whoa, more to do tomorrow.

Just a while ago, I made my own cranberry sauce. I decided to make my own as I always feel that there is not enough cranberry sauce to go around. After making some research, I decided to do a big portion using 500 g of cranberries. This is because I bought some last week for my cranberry and chicken rice. I had some left over and bought more. It is very easy to make and you can see all the cranberries!!  Unlike the shop bought ones, where there are more sugar than anything else.

While cooking the sauce, I managed to make some mini Yorkshire pudding as well. It puffed up so much that I wasn’t able to get the mini shape that I wanted. Nevermind, better luck next time.

So here is the super easy recipe for

Cranberry Sauce

Quick Info:

Time:  to prepare and cook- 20 Minutes

Level of difficulty: Super easy

Cost: £

Makes about 3 jam jars.

 

Ingredients:

280 g granulated sugar,

320 ml orange juice

500 g fresh cranberries

 

Method:

  1. In a medium pan, put in the sugar and the orange juice. Heat over medium flame and stir until the sugar has dissolved.
  2. Tip in all the cranberries and bring to a boil and simmer. Stir until all the cranberries pop. Make sure all of them are popped. This will take about 10 minutes.
  3. Remove from heat and transfer to a bowl or sterilised jam jars.
  4. Cool and serve.

 

Note: I put mine in jam jars so that I can easily store it.
