No Strings Attached Beans aka Sichuan Style Vegetarian Beans

Sichuan Style Vegetarian Beans

also known as ‘No Strings Attached Beans’

This is an easy and healthy alternative to the original Sichuan dish in which the beans or aubergine is deep-fried before cooking with the rest of the ingredients. I boiled the beans instead of frying in oil. So you can consume this without guilt! So this is also known as No Strings Attached Beans.

I served this in my Wefifo vegetarian dinner and it was well received. I have made it many times now, so you can be sure that this recipe works.

BTW, it is vegetarian and vegan.

Ingredients:

200g French beans or fine beans or aubergine
50g Chinese preserved radish or Chai poh (use the sweet type)
50g Quorn mince
2 clove Garlic – chopped
1 Tsp Chopped ginger
1 Tsp Sesame oil
½ Tbsp Sugar
½ Tbsp Light soy sauce
1 Tsp Crushed chilli, or more if you prefer
Black pepper powder
1 Tsp Corn starch for thickening.

 

Method:

  1. Soak the preserved radish in water for about 15 to 20 minutes.
  2. Meanwhile, put the beans in a pot of boiling water and boil until it is slightly soft, about 10 minutes. Drain and squeeze dry by placing the beans in between 2 plates and press the plates together so that the water drains. Set aside.
  3. Taste the radish, it should be a bit salty and sweet. If the taste is still salty, soak for another 5 minutes.
  4. Drain the radish and squeeze dry.
  5. In a hot wok or pan, spray with cooking oil and fry the garlic and ginger until light brown.
  6. Add in the preserved radish and Quorn mince and toss. Add in the rest of the ingredients except beans the corn starch mixture. Fry until fragrant.
  7. Then add in the beans and toss for another 2 minutes or so until the flavours meld. Check the seasoning and add in more soy or sugar and pepper.
  8. Thicken with the corn flour mixture so that all the bits meld together.
  9. Plate up and serve.

So there you go, and easy peasy veggie dish full of flavour.
