Ok, Here is the another easy soup using eggs. It is a continuation of my recipes from the good old days. It is good to know that some of you have tried the original omelette soup and like it. Here is another for you which is takes you skill a notch up.
This recipe is easy to make but a bit time-consuming. It is as simple as making a filled omelette, except that the omelette is rather small. So you have to repeat the process many times. I tend to make the omelettes smallish, but you can make it bigger to save time.
My family and I love this soup. We used to have this when we were young. I do occasionally make this, as I get distracted by all the recipes that I come across in cookbooks, magazine and online. My youngest sister recently reminded me of this dish when I posted the omelette soup. So I am now posting this delicious soup for her to try.
My sister-in-law cannot bother to cook this as she thinks it is just too much hassle and time-consuming. She said she would make a big omelette with meat in the middle and just cut it and make a soup out of it. This sounds logical, and I have yet to try it!
This soup has zero points, it is an easy and healthy soup. If you use stock / stock cubes or granules you need to point it. And as usual you can add in vegetables or noodles to make it a meal.

Ingredients
Meat filling:
200g minced chicken or turkey breast.
1/4 tsp sesame oil
Salt and pepper
For omelette
3 large eggs
Salt and pepper to taste.
Soup Base
600 ml Hot water or stock
Garnish:
Chopped spring onions
Preserved tien sin vegetable
Garlic crisp and oil.
Method:
- Mix all the filling ingredients well. Set aside in the fridge.
- Break the eggs in a bowl and season with salt and pepper. Whisk with a fork or whisk to mix it thoroughly.
- Heat a non-stick pan over medium heat and spray with calorie control spray.
- When the pan is hot, add 1 tbsp of the egg and pour it making it a circle. It will sizzle gently.
- Take a small teaspoonful of the mince and shape it into a little ball.
- Place the meat in the centre of the little round. Then flip over and cover the meat to form a semi-circle.
- Let it cook for a few minutes, lightly browned, then flip over to lightly brown the other side.
- Dish up. Repeat until all the egg is used up.
- Put back all the little omelettes back into the pan
- Add in the water or stock
- Bring to the boil and simmer for about 5 mins
- Season to taste.
- Dish out into 4 individual bowls and garnish with spring onion, tien sin veg and 1/4 tsp of the garlic crisps to each bowl.
