I have tried to replace high carbohydrate food with low carbo food. I have tried to cook Penang Char Koay Teow using cabbage and it is a success. I am now trying more and experimenting with local ingredients. I will post the Low Carbo and low Cal Char Koay Teow later
Zoodles
After making the Assam prawns, I decided to serve it with noodles instead of rice.
I served the Assam prawns with noodles done the normal way – blanched and seasoned with soy sauce, oyster sauce sesame oil and garlic oil and crisps.
I also served mine with zoodles… zero propoints noodles instead of normal noodles that will cost me 5 propoints for a serving of 50g dry weight.
Choose courgettes that are not to big as it will be matured and full of seeds. Get medium-sized ones so that it will not turn watery.
How to make zoodles.
You will need:
I medium courgette ( or zucchini) per person
Seasoning for the zoodles:
2 tsp sweet dark soy sauce
2 tsp soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
A dash of sesame oil
Garlic crisps and oil
White pepper powder
Method:
To make the zoodles:
Cut off the ends of the courgette.
Cut the courgette into half to get 2 manageable lengths. If you can manage the whole length, then there is no need to cut into 2.
Slice off a few thin slices off the courgette length-wise. Then turn over so that the cut flat side is on the chopping board. This will give it much stability when cutting.
Continue to slice thinly until you finish slicing.
Stack the slices on top of each other and slice length-wise so that you get long shreds. You will need to repeat his several times, ie, in batches.
Shred the other half of the courgette the same way.
You now have long strands of courgette.
This is your zoodles.
To cook the zoodles:
You can either stir fry the zoodles the normal way, or, you can blanched it.
I found that when you stir fry it, try to avoid frying for too long. When fried for too long, the courgette will become watery and will not taste good.
If you blanch it, scoop out with from the water after 2-3 minutes, drain, and season with the seasoning. You can serve it with barbecue pork ( Char siew) or Assam prawns, which I just did. In fact you can use it like regular noodles.
