Fried Cabbage With Eggs
Fried cabbage with eggs is a very common dish. As it is common, every family will have their own way/style of cooking it. I can recall that when I was a teenager, I visited my classmate and spent the day in her home. She had to cook dinner that evening, and the vegetable dish that she made was Fried Cabbage With Eggs.
The way she cooked it was slightly different from mine. She fried the cabbage until it was really soft and slightly dark. It was lovely. So from that time on, I cook mine the same way.
So here is the recipe.

Ingredients
½ head Sweet heart cabbage – shred as finely as you can
1 Onion – red is preferred, cut in half and sliced thinly
½ Carrot – julienne
2 cloves Garlic – chopped
1-2 Medium eggs
1 Tbsp Light soy sauce
1/2 Tsp dark soy sauce
White pepper powder
Oil for frying
Method:

Heat a wok or frying pan and spray with oil. Or use 1 tsp of oil.

Add the garlic and the onions and fry till it is soft.

Add in the carrots, and fry for about 1-2 minutes. Then add the cabbage. Toss and fry until it is soft. Add in the soy sauce and continue to fry. You can cover the wok and let it simmer over low heat for about 5 minutes, checking that it does not burn. Toss and turn a couple of times.

When the vegetables are well charred and caramelised, push the vegetables to one side of the wok. Spray the empty space with oil then break the eggs on it. Season with a dash or two of white pepper powder and a dash of light soy sauce. Stir lightly to mix the yolks and the whites and let it set a bit.

The turn the vegetables over it and let it set a bit more. Then mix it up so that there are no large lumps and the eggs are evenly mixed with the vegetables.

Season with pepper and soy sauce if necessary.

Dish out and serve.
