Garlic!

Yes, garlic is the most important ingredient. It goes into most of the stir frys, chillies, sambals and soups.

In fact a key ingredient we use in the kitchen is garlic crisps and garlic oil. I know some chefs in UK do not like garlic in pieces, they prefer it crushed. Chopped garlic fried until golden gives a new dimension to garlic taste.
